Antonella Estefan\u00eda Bergesse (UNC). <\/strong>Esta\u00a0propuesta aborda los <strong data-start=\"776\" data-end=\"830\">principios fundamentales del an\u00e1lisis de alimentos<\/strong> y los m\u00e9todos utilizados para estudiar sus <strong data-start=\"874\" data-end=\"901\">propiedades sensoriales<\/strong>, aspectos que resultan claves tanto en el <strong data-start=\"944\" data-end=\"978\">desarrollo de nuevos productos<\/strong> como en el <strong data-start=\"990\" data-end=\"1012\">control de calidad<\/strong>.<\/p>\n<p data-start=\"1017\" data-end=\"1273\">El curso permitir\u00e1 a los y las participantes conocer las herramientas disponibles para la evaluaci\u00f3n sensorial, analizar sus ventajas y limitaciones, y formar un criterio adecuado al momento de seleccionar los procedimientos m\u00e1s efectivos para cada caso.<\/p>\n<p data-start=\"1275\" data-end=\"1310\">El equipo docente colaborador se integra <strong>Dr. Nelson Rub\u00e9n Grosso, Mg.
