experiencias, en el marco del programa del trabajo final de la estudiante de la carrera Ingenier\u00eda Qu\u00edmica, Evelin Savarino, titulado el \u201cEstudio del comportamiento de un rebozador durante la fritura y su producci\u00f3n a escala industrial\u201d.<\/p>\n<p>Cumpliendo el protocolo sanitario establecido por la UNSL y bajo la direcci\u00f3n del docente, Luciano Olmedo, la estudiante lleva a cabo la preparaci\u00f3n de un rebozador a base de amaranto popeado, s\u00e9samo y lino; que es mezclado con alb\u00famina y se arman peque\u00f1as esferas, las cuales se someten a un proceso de cocci\u00f3n en aceite a diferentes tiempos, para luego realizarles algunas determinaciones.<\/p>\n<p>Este trabajo se lleva a cabo en el marco del proyecto PROICO N\u00b0 14-4420: \u201cDesarrollo de productos a base de amaranto\u201d y el objetivo es poder determinar la cantidad de aceite retenido en el rebozador, los cambios en su coloraci\u00f3n y la conservaci\u00f3n de sus propiedades nutricionales.<\/p>\n<p>&nbsp;<\/p>\n<div class=\"gmedia_gallery phantom_module is_bot\" id=\"GmediaGallery_23\" data-gmid=\"23\" data-module=\"phantom\"><style type='text\/css'
